The palate is structured with well-present tannins while maintaining the usual smoothness of a ripe Mondeuse. The nose is explosive with aromas of cherry, violet, cocoa, pepper, and licorice.
A classic pairing with beef, duck breast, or pork, and with game as it ages, and possibly with cheese due to its structure. Aging potential of 10 years or more for a wine that will develop great expression with age.
Domaine Nicolas Gonin is located in the village of Saint-Chef, in the Balmes Dauphinoises region of Isère. Isere is in Southeastern France between Lyon and Grenoble.
Nicolas does not work the soils under the vines, just trims between rows a couple of times per season, and under the vines once in June. No fertilizers are used, with certified organic farming since 2012.
