No chemical fertilizers are used in the vineyard. A manual harvest, sorting is rigorous. De-stemmed and crushed with fermentation in stainless steel tanks at moderate temperatures (less than 28 degrees Celsius). Maceration on the skins for 8 days with daily pump-overs. Aged for 8 months in second hand 225L barrels. Lightly fined and minimally filtered.
