100% Nebbiolo from 50 year old vines overlooking the town of Alba in Piedmont. Pair it with a juicy and crispy Pork Milanese. Paolo Veglio is a first generation winemaker, and was the only child out of three in his generation who cared about the family farm. When he was young, he apprenticed himself out to local farmers in the area to learn about winemaking, and eventually began his journey. Only 4 hectares out of his 20 total are planted to vines, as he has very much taken an old school, holistic, anti-monoculture approach to the vineyard. The property is full of wild herbs, wheat grasses, trees, flowers and insects. Before beginning his own label Paolo used to sell his fruit to some of the greatest vineyards around, including Gaja and Bruno Giacosa. Paolo uses his youngest vines for this wine, and attributes the freshness of the juice to his low-lying clay soils, which sit near the Tanaro River. Using the traditional steccatura method, Paolo does not have to punch down the wines, and can macerate longer and more slowly, for a true depth of flavor.
