PROCESSES
Harvest: manual in plastic boxes
Vinification: selection of the grapes with the help of a
vibrating table. Part of the bunches are destemmed and
ferment in a wooden tank with indigenous yeasts only.
The remaining grapes ferment using the technique of
carbonic maceration.
Aging: Part of the wine ages in stainless steel, the other
part in a 31HL wooden tank for 9 months. Unfiltered.
