Unfined and unfiltered, ‘Cattabrega’ is a blend of uva tosca and lambrusco grasparossa. There’s no disgorgement: Instead, the yeasts remain in suspension inside the bottle, giving the resulting frothy and coral-colored wine a slightly cloudy appearance.
