Vineyard: 50 year old vines, clay-limestone (yield of 45hl/ha)
Exposure: Northern-Facing
Vinification: Machine sorted, but manual harvest. 100% destemmed with direct pressing, cold settling for 24-48 hours in stainless steel vats. Skimming during fermentation, and low-temperature vinification. Fermentation in stainless steel vats, aged on fine lees in stainless steel for six months. Racking before FA, again 30 days later, and then again before bottling. Light fining and filtration. Light sulfuring at bottling.
