Sparkling Rosato, not technically a Lambrusco since it is from Lombardy (not Emilia Romagna)

Varietal: 100% Lambrusco di Sorbara
Winemaking:Hand harvested in late September and fermented in steel tanks where it is kept until June then bottled unfiltered. The warm days prompt the start of a second fermentation in the bottle. The wine then rests one year in the bottle before release. It has no residual sugar and some sediment.
Corte Pagliare is a small, family run, organic farm located in the Po river plains, outside of Mantova, near the beautiful, forsaken hamlet of Sabbioneta, a Reinassance gem.
The winery was started in 2001 by Mimma and her husband and has 3 hectares of vineyards on clay soil well suited for vine-growing, so much so that the Benedectine monks were already making wine in the area in the year 1000. The vines cultivated are different clones of Lambrusco such as Salamino and Sorbara, but the main focus is the Viadanese clone, indigenous of this part of Lombardia. It produces a wine of intense color and robust and rustic character. Its characteristics are enhanced by the fact that the Corte Pagliare wines ferment in the bottle without any added yeasts, rather than in charmat tanks, thus preserving intact all the varietals personality
