More about the Winemaker:

Constantina Sotelo is a vigneronne who's been making wine under her own name since 1999 with the support of her family. Together, they've created a micro-project that truly stands out compared to other wineries in the Rias Baixas. She is driven by Albariño and its relation to the soil, playing with different vinification methods and vessels, such as skin maceration, aging under flor, aging amphora or aging in cement eggs. The resulting wines are singular and pure representations of the grape like we've never experienced.

All her wines are naturally fermented without any additions. Although Constantina’s bodega is in the heart of Rias Baixas she chooses to work outside of the DO due to their restrictive and conservative rules which require wines to be filtered and/or inoculated with lab bred yeast in all wines that contain the DO’s stamp. These are restrictions which Constantina disagrees with and therefore she is not permitted to either label her wines with Rias Baixas or list the varietal on her bottles.
