This is a little darker and younger than the Amontillado and Palo Cortado, gentle, with a peachy nose with some spiciness from the old wood, low-pitched, wider and warm. It's tasty and long.
• 100% Palomino sourced from criaderas in the Compañia bodega
• Aged oxidatively for an average of 10 years in old American-oak botas
• Bottled en rama (directly from the cask with minimal filtration)
Compañía is named after the Jesuit convent built on this site in 1630. The aging cellar stands within the ‘new’ church completed in 1737, just 50 years before Carlos III expelled the Jesuits from all Spanish territories. Barbadillo purchased the church at public auction in 1942 and has used it for oxidative aging since then.
