Illaria's vineyards are located in Caluso, on the south slope of the Ivrea Morainic Amphitheatre, at an elevation of 320-350m. The diverse soil here results from an ancient glacial lake that receded and left a basin-like depression with a foundation of quartz, granite, sand, silt, and clay, providing the ideal environment for cultivating her prized Erbaluce. From the outset, they have worked in the vineyard respectfully and naturally for the health of the soil, plants, and animals and received organic certification in 2016.

Following a gentle pressing, the wine undergoes spontaneous fermentation and is then aged on its lees for a period of six months before bottling.
