Illaria's vineyards are located in Caluso, on the south slope of the Ivrea Morainic Amphitheatre, at an elevation of 320-350m. The diverse soil here results from an ancient glacial lake that receded and left a basin-like depression with a foundation of quartz, granite, sand, silt, and clay, providing the ideal environment for cultivating her prized Erbaluce. Following a gentle pressing, the wine undergoes spontaneous fermentation and is then aged on its lees for a period of six months before bottling.
