Bodegas Quo was founded in 1956 in Campo de Borja, a transitional area among the mountains of the Sistema Ibérico in the Ebro Valley. The conditions in the region are extreme, with the vines planted at 1,000-2,000 feet. The temperatures fluctuate widely between night and day and season to season and rainfall is rare, with yearly averages between 350mm-450mm (13-17 in). The Bodegas Quo vineyards are organically and dry farmed, with no chemicals used (pesticides, fertilizers, additives, etc). At harvest, the grapes are handpicked. Spontaneous fermentation takes place in glass lined cement tanks with native yeasts. Finally, the wines are very minimally fined or filtered.
