Softer than expected to start, with cream and gentle ground cinnamon spiciness. Fruit rolls in behind that, with raisins and apple joined by cinnamon bark and soft flapjacks. Chill-filtering is a process to remove the majority of fats and oils that occur naturally in the malt. Large distilleries use chill filtering to remove cloudiness and to ensure consistent flavors in their blends. This independent bottling is non-chill filtered to maximize the natural flavors and textures of the particular cask, vintage, and terroir!
