Stefano Daffonchio farms 25 acres in eastern Piemonte's Colli Tortonesi. The area is home to the rare Timorasso, a variety so challenging to grow that it has but a handful of producers. Hard work pays off however in lovely, ageworthy wines that burst with fresh acidity and aromatic character. Timorasso is an ancient Piedmontese grape variety that was on the verge of extinction in the 1980s. Carefully revived,the yellow-green-skinned Timorasso has enjoyed a resurgence in dry white wine and grappa production.
