Delaware Phoenix absinthes are crafted in the tradition of the finest absinthes of 19th century France. I use herbs grown in New York, Virginia, Italy and Spain. Grand wormwood, anise, fennel, roman wormwood, hyssop and lemon balm are six herbs used in common between the two absinthes. With different herb ratios and herb sources, two very different absinthes are created. Each has their own partisans. The Walton Waters is considered more traditional when compared to other absinthes. It’s also called the “masculine” absinthe. The Meadow of Love is more delicate and floral and often called the “feminine” absinthe.
