Whole bunches of Shiraz and Grenache were co-fermented for 40 days on skins. After full carbonic maceration occurred the free run was bled off and a gentle pressing released a bit more tannic juice into this blend. 11 months in barrel and there you have Tikka. This was bottled without any additives including sulfur. A dark and youthful blend of Syrah and Grenache named after the winery cat. Tikka is an explosion of dark fruits and peppery spices, blackcurrants, dark cherries, brambles and wild, woody thyme bushes. This medium bodied little number has a driving acidity and strong minerality that, like it’s namesake, commands attention. Dark bitter chocolate and silky tannins round the wine off nicely. This is an awesomely dark little wine.
