Didier and Hélène Defaix, own vineyards in both Chablis and Rully along with a few plots in the Côte d’Auxerre just south of Chablis. The winery and cellar is located in the small village of Milly, on the left bank of the Serein, where all of the grapes are brought for vinification. 2017 was yet another difficult year for growers in most of France, with spring frosts severely reducing yeilds. On the upside, a dry and warm summer made for small, thick skinned berries, translating into wonderful concentration and racy acidity. This is a top notch example of the mineral nerve of Chablis at a reasonable price.
