Soil Type(s): limestone known locally as "calcaire à astéries" Vineyard Area: 12 ha Vineyard certified in organic (AB label) and Biodynamic (Biodyvin and Demeter) farming. Fermentation done 50% barrel, 25% Uncoated cement, 25% Stainless steel. Cold pre-fermentation maceration (4 days). Post-fermentation maceration in vats for 20 days.
