Organic. Medium-bodied, quite dry, sparkling, cloudy. Crisp notes of flint, lemon zest, lemon oil, and pomelo. Finishes with a refreshing tartness. Serve well chilled.
No chemicals are used. Mechanical process to cut the grass between the rows. Everything is hand-harvested, by a team of about 30 people, usually starting around September 20th. The wines are vegan, no animal derivatives are ever used.
